Glory Revealed - By His Wounds Lyrics
(Feat. Mac Powell, Mark Hall, Steven Curtis Chapman and Brian Littrell)
Isaiah 53:5
He was pierced for our transgressions
He was crushed for our sins
The punishment that brought us peace was upon Him
And by His wounds, by His wounds we are healed
He was pierced for our transgressions
He was crushed for our sins
The punishment that brought us peace was upon Him
And by His wounds, by His wounds we are healed
We are healed by Your sacrifice
And the life that You gave
We are healed for You paid the price
By Your grace we are saved
We are saved
He was pierced for our transgressions
And crushed for our sins
The punishment that brought us peace was upon Him
And by His wounds, by His wounds we are healed
We are healed by Your sacrifice
And the life that You gave
We are healed for You paid the price
By Your grace we are saved
We are saved
He was pierced for our transgressions
He was crushed for our sins
The punishment that brought us peace was upon Him
And by His wounds, by His wounds we are healed
And by His wounds, by His wounds
What can wash away my sin?
Nothing but the blood of Jesus

Lavender Harvest
Purple is my favourite colour! Ok, everyone who knows me will know this :) it's hard to avoid because I talk about purple pretty often :)
Now that I'm in culinary school, I think Chocolate is my next favored :) still, nothing beats purple tulips, purple linen and purple cake (haha). Alright, I am obsessed with PURPLE!

2 weekends ago, sweet Veronica, my new San Franciscan/Singaporean friend of mine, fulfilled my dream of seeing purple :) We went to a Lavender Harvest!

I always thought that Lavender is found primarily in Provence, the south of France. Surprisingly, Sonoma county (45 mins away) is also a prime producer of Lavender! So, off we went - harvesting Lavender
Under the hot California sun, my toes were scorching and skin was burning :P Thankfully, Veronica prepared sunscreen for us (Veronica, T and I).

Armed with our mighty scissors, we snipped and snipped and snipped. Of course, we also had to battle with busy bees for the beautifully sweet Lavender.

T and I, with scissors in hand

Veronica, me and T (with our handpicked Lavender bunches)

Trying to be brave while posing (imagine bees flying around you!)

Busy Bee, one of the millions in the fields
With my $5 bunch of Lavender, my room smells fabulous now! Dreams are definitely sweeter when I fall asleep in Purple (I spray lavender pillow mist before sleeping). Good night!

Jardin au Paradise
After my previous post on the Princess Kelly cake - literally a wedding cake for my buddy, princess Kelly :), I received calls about my workmanship!
Haha, everyone was wondering if I really did all that from scratch. Guiltily, the answer is YES :) that's why if you are going to order a custom made wedding cake, it will cost a bomb depending on how decorated it is.

Handcrafted White Chocolate Roses - US$7 per piece if you buy (I made these FYI)
The wedding cake business is huge in the USA and it is slowly picking up in Singapore. While i enjoyed making wedding cakes :) I doubt I will spend days over 1 cake, unless I'm really being paid a bomb :) (BIG HINT)
For this wedding cake class, I'm really lucky have Scott as my partner :) Being 40, he is the eldest in class, with 3 Master degrees, ran his own restaurant and is a superb botanist.

My partner - Scott
For our final wedding cake project, we decided on a Jardin au Paradise theme - Garden Paradise :)
Enjoy!

Jardin au Paradise

Cake Enrobed in Rolled Fondant, Piped with Royal Icing, Decorated with Handmade Flowers.

Gum Paste Sweet Peas

Fleur De Lis is the classic French emblem and chosen design for our cake :) Coupled with piped royal icing, painted with luster dust.
We love this cake! and best of all, it was entirely created by Scott and I. An original design and copyright belongs to us! There are just 2 people in this world who can make this - Scott and I!

And Chef Difilipo loves it too! We received full marks! Yuppies!

All four sides of the cake are decorated in a symmetrical way, and designed to replicate a floral garden.
In total, we made 54 flowers from scratch and if you like to order this cake from me, do the math :) 56 X USD 7 = USD 392 for flowers alone (excluding cake)
But trust me, your return on investment is priceless :) if only you can see this cake!d

Princess Kelly
Before I left Singapore to come to the CIA, I was entrusted with a pretty big responsibility by my dear dear buddy, Kelly. In fact, I wasn't sure if I was able to do it.
Well, this is the trial run of a likely version of her wedding cake :) Due on 19 January 2007, I still have 6 months to improve :)
Titled "Princess Kelly", this is a special one for my fun and lovable friend :)
Kelly and I have gone a long way since Secondary 1. From MGS to ACJC to SMU, haha we are inseparable :)
So, I hope she will enjoy this 2-tiered cake! This is my very first wedding cake and I hope it will pass.

Princess Kelly (Tilt your head)
So enjoy every bit of the lovely roses, glittery vines and Tiffany Blue - all of which reminds me of Kelly!

Top Tier with Hand Molded Pastillage Vase

Handmade Chocolate Roses brushed with Champagne Luster Dust

Top Tier Piping Detail.

A Bed of Roses

Lower Tier

A Closer View
I know it seems unbelievable but yes, I made everything. From the design, to handcrafting the roses, painting every one, piping etc, I did it :)
But all these are only possible because:
"For we are God's workmanship, created in Christ Jesus to do good works, which God prepared in advance for us to do."
Ephesians 2:10
YH has reminded me that all of my creativity, strength, wisdom and cakes come from the Lord and To God be the Glory!

Sweet Harvest
It's Harvest Time!
This weeks marks the start of a new course called Confectionery Arts and Weddings Cakes. In short, it refers to the decoration of cakes - special occasions, weddings. you name it, we'll make it!
Initially, I was really excited about the course but as the week began, I realised that decorating cakes isn't really my forte or interest. I lack imagination, creativity and patience to pipe all those buttercream on the cake. Going through classes was a bit of a drag :P
Still, I will try to learn as much as I can because weddings cakes are of increasing demand these days and haha, I also have a "client" waiting for me when I get back :)
Bride-to-be Kelly :)
As part of my project in school, I've been assigned in advance to design and make a wedding cake for my dear buddy, Kelly. Hopefully, it will work! :)
Today's Day 2 and my very first time decorating cakes and handling marzipan - sweetened (overly sweet) almond paste commonly used to shape figurines for decoration or as cute snacks.
Each of us is suppose to enrobe a fake cake with rolled marzipan, make a border, decorate it and make a plaque for inscription. I sighed hardly because I really had no cake experience as compared to some of my veteran classmates.
Still, I tried my best and as I rolled and shaped the marzipan, I gained momentum and speed :) haha kind of like driving.
Boxes of Brooke Cherries at Berkeley's Farmers' Market
It's Peach Season!
Being inspired by Spring's offering of fresh fruits :) I eat cherries and strawberries daily! I finally made "Sweet Harvest"
I hope you'll like Sweet Harvest as much as I do :) I love it!!!
Each Cherry is hand-rolled, dusted with luster dust and topped with a handmade stem :) I tried to make it look as real as possible.
Check out the Basket Weave with little hearts - reminds me of Care Bears :)
Here are some of the works of my classmates:
Jennifer's Cowboy Cake
Skater Boy Brian's
KC's Stars
T's Fraises (French for Strawberries)
Angela's Happy Birthday
Ashley's Busy Bee Daisy
Hope that you have enjoyed the cakes :) It's Time to eat those plum cherries!

Car Washing Cocoa Nib
Today, I did something that my family will be so proud of! Actually, I'm really proud of it myself though it will probably sound so bimbotic to you.
Since my sister's visit :) 1 week back (we had such a great time!!! eating and getting fatter together, haha!), I've been bombarded with daily nagging about cleanliness.

Finally, Japanese food!!!
Yes, Cleanliness is also Holiness as I heard one sermon by Cornerstone Community Church. Yet, everyone has different standards and to me, I think my room's really cosy and nice with my beloved book collection :)
That is until my clean-freak sister arrived that fateful day :) according to her, my room is a pig-sty. Read her blog at http://www.an-igloo-sty.blogspot.com/ and let me know what you think!

My sister, Soo Ling, complaining about her fat fingers :P
Ok, back to today: I washed a car for the first time!!! Ok, it really sounds bimbotic by now. Still, I need to tell the world about my great achievement :)

Besides sweets, my other great passion is cars. I love cars, I love driving but I can't say the same for car washing. Never tried it.
But because my car has reached an undesirable stage of mud and dirt, I need to take action.
:) First, let me introduce you to Cocoa Nib :) My very own VW Black Beetle. 1.8 L Turbo with a sunroof and groovy moves! I have been driving it for almost 2 months and loving it every minute!

I love it's sporty look and my sister signs at it's spotty appearance. Today, I had enough and took the bucket.
Armed with Turtle Wax Car Wash Liquid, I splashed, cleaned and wiped every spot available. :) Hey, it was a pretty good workout too!

Turtle Wax, dries without residues and spots. Really works!
After 1 hour, it is finally clean :) Cocoa Nib is breathing through fresh skin again!
It may not be up to my mum's super high standards but I believe it will please my sister :)

To Mei Mei: It is clean!!! Really Clean!!! Now, you can open the car door without getting your fingers stained!

Getting behind the wheel on the left side.
So till the next wash (likely to be next week since cars get dirty quickly in Napa), I'm loving my spotless spotty Cocoa Nib. It's going to be cool again zipping around town in it!

Meet my daily travel companions - Pink and Praying Giraffe (suppose to name it but not sure it's name yet). Giraffe comes in a pair (praying partners) and the other one is currently with YH :)
I've also been very stressed up about my Master programme, which is really killing me :( But YH is so sweet!!! To welcome me back to my home (after dropping my sister off at the airport), he sent me beautiful fuscia roses!!!! I love them!!! I love him!!

Rose buds when they first arrived :)
Enjoy the blooms :)

After 4 days :) in full bloom and they are so beautiful!!!

Mille Feuille

This post is really dedicated to Yew Hong :) and his love for Mille Feuille.
Years back when we were just friends and members of the same small group, our entire group went for a dinner date at Boat Quay. I can still recall my Pasta Fresca wrapped pasta dish - something with mushrooms. Anyway, we popped over to Baker's Inn (before it became Bakerzin) at the Esplanade and each of us had a dessert.

I can't remember what I had (can't believe it! I'm the aspiring pastry chef) but I always knew that Yew Hong ordered the Strawberry Mille Feuille. The dessert name itself was quite a mouthful but he went ahead with the delicious pastry.
In those days, we were just purely small group members :) and I can't even say that we were friends because most of my friends are girls. haha.
Praise the Lord that He brought us together in a special way from small group members to friends to french movie kakis to a couple :) It is really only Him and through Him that we are together.

The funniest French movie that we watched together at Alliance Francaise - Ah ! Si J'Etais Riche
And as my baking obsession increased in recent years, I asked Yew Hong which is his favourite dessert. I wanted to master that for him. And he spoke about that faithful night at Baker's Inn. Mille Feuille is pretty hard to pronounce but he described it well and I knew immediately that I have to perfect Mille Feuille.
I gave my promise about 1 or 2 years back and haha, I didn't come near to even creating it. Firstly, it's so tough! Not just the name, but the layers needed. I was intimidated but I told Yew Hong that one day, I'll make it for him :)
And today is the day. I made my very first Mille Feuille!
In French, Mille Feuille means a thousand leaves :) how pretty a name for a delicate pastry like this. If you have had Mille Feuille, you know that it is like a dainty lady.
When you cut into the pastry, the layers of puff pastry produce a cracking sound and the smooth pastry cream oozes out. It's simply waiting for you to take a bite!
Oozing Diplomat Cream
From hand kneading the puff pastry to every single fold, I did every process by hand. Baked to cripsy golden brown, the layers are sliced and assembled with pastry cream.
Mille Feuille ready to be portioned
Today, I made 2 types of Mille Feuille. A classic Mille Feuille filled with Vanilla Pastry and a Caramelised Calvados Mille Feuille filled with Calvados Diplomat Cream.
After Assembling the Mille Feuille, a layer of Fondant (yucks) is applied and with quick techniques, a Chocolate design is applied :)
The Classic Mille Feuille
The Caramelised Apple Calvados Mille Feuille - Calvados is an American brand of Brandy (hmmm, but what do Americans know about brandy?). The next time, I will try Cognac :) And check out the layer of Caramelised Apples below the Brandy Diplomat Cream.
After a long day, the taste of these Mille Feuille is all worth the hard work! Though they may not be as pretty as Bakerzin's version, I hope Yew Hong will be proud of me :)
Very soon, he will get to taste it! And yes, he gets to be first!
